Roasted Chili Buffalo Sauce

Ingredients

  • 125g Fresno Chili

  • 50g Red Bell Pepper

  • 20g Serrano Chili

  • 50g White Onion

  • 10g Fresh Garlic

  • 10ml Tomato paste

  • 100ml White Vinegar

  • 10g Brown Sugar

  • 5g Kosher Salt

  • 20ml Canola Oil

  • 100ml Water


Directions

  1. Turn your BBQ on as high as it will go. In a bowl toss all the peppers and chilis with half the canola oil.

  2. Place the peppers and chilis on the BBQ until the skin is charred and blackened, remove from the grill and set aside.

  3. In a medium pot over medium-high heat add the remaining canola oil

  4. Dice the white onion (medium dice) and chop the garlic.

  5. Add onions and garlic to the pot and cook until soft, make sure to stir.

  6. Rough chop the chilis and peppers and add to the pot along with the sugar, tomato paste and water. Stir until tomato paste and sugar are dissolved.

  7. Reduce the heat to a simmer and cook for 15-20min.

  8. Remove from heat and transfer to a blender and blend until smooth. You can also use a handheld stick blender if you do not have a blender.

  9. Stir in salt and check the seasoning.

Enjoy this sauce on your burger or with some chicken. Grab some chicken wings, toss them with salt and pepper and throw them on the grill until they reach an internal temperature of 165 degrees F. Toss the wings with the Roasted Chili Buffalo Sauce and place them back on the grill for 2-3 min flipping halfway. Serve them up with some ranch dressing and your favourite local beer on a sunny summer day.
