Chipotle Black Beans

Ingredients

●     1 can (540ml) black beans

●     ½ cup white onion, small diced

●     1 tsp garlic, minced

●     3-4 strips double-smoked bacon, diced

●     ¼ can chipotle peppers in Sauce, finely chopped

●     1 tsp sugar (can be replaced with honey or agave)

●     ¼ cup tomato paste

●     ½ tsp oregano

●     ½ tsp salt

●     ½ tsp black pepper, ground

●     1 tbsp canola oil

●     1 cup water

Directions

  1. Place a medium-size pot on medium-high heat and add oil

  2. Add the diced bacon and cook until the fat has rendered out of the bacon

  3. Add the diced onions and garlic to the pot and cook until soft, stirring frequently

  4. Add the black beans, chipotle, tomato paste, sugar and sauté for 1-2 min

  5. Add the oregano and water, stir to combine, bring to a boil

  6. Reduce to a simmer and cook for 10-15 min

  7. Beans are ready to serve or can be cooled down and kept in the fridge for 3-4 days

Recommendations:

These chipotle beans are great as a side dish and go well with tacos and burritos. Use it as a side for your breakfast in the morning or heat and serve on top of some nachos for the big game!
