Potato Corn Chowder

Ingredients

  • 1 cup onion small dice

  • ½ cup celery small dice

  • 1 teaspoon minced garlic

  • ½ cup flour

  • ½ cup butter

  • 4 cups vegetable broth

  • 4 yellow potatoes medium dice

  • 3 cups corn fresh or frozen

  • ¾ cup whole milk

  • ¼ cup heavy cream

  • 2 tablespoons dill

  • 2 tablespoons brown sugar

  • 1 tablespoon apple cider vinegar

  • Pinch cayenne pepper

  • Salt and pepper to taste

  • Green onion for garnish

Directions

  1. On medium heat melt butter, add onion, celery and garlic. Cook until translucent.

  2. Mix in flour and cook for 5 minutes.

  3. While slowly pouring in vegetable stock whisk vigorously.

  4. Pour in milk and cream.

  5. Add potatoes and corn. Stir, bring to a simmer- and reduce heat.

  6. Cook for 15-20 minutes (stirring occasionally) until potatoes are tender.

  7. Add dill, brown sugar, cider vinegar and cayenne.

  8. Season with salt and pepper to taste.

  9. Garnish with chopped green onion
