Potato Corn Chowder

Ingredients
1 cup onion small dice
½ cup celery small dice
1 teaspoon minced garlic
½ cup flour
½ cup butter
4 cups vegetable broth
4 yellow potatoes medium dice
3 cups corn fresh or frozen
¾ cup whole milk
¼ cup heavy cream
2 tablespoons dill
2 tablespoons brown sugar
1 tablespoon apple cider vinegar
Pinch cayenne pepper
Salt and pepper to taste
Green onion for garnish
Directions
On medium heat melt butter, add onion, celery and garlic. Cook until translucent.
Mix in flour and cook for 5 minutes.
While slowly pouring in vegetable stock whisk vigorously.
Pour in milk and cream.
Add potatoes and corn. Stir, bring to a simmer- and reduce heat.
Cook for 15-20 minutes (stirring occasionally) until potatoes are tender.
Add dill, brown sugar, cider vinegar and cayenne.
Season with salt and pepper to taste.
Garnish with chopped green onion
